  5. Let the dough rest in the refrigerator for 5 or 7 minutes wrapped in a clean, dry cloth.

How to puff the dough

  1. Once this time has elapsed, we remove the cloth and make a cross on the surface of the ball with a knife.
  2. Next, we will take the rolling pin and begin to flatten the dough to obtain four folds. (We must ensure that the center of the dough is always thicker than the rest).
  3. In the center of the dough, we place a little butter and cover it with the 4 folds of dough (it should be a kind of wrapped square package). Each fold should be greased with just a little butter (for this we will use the brush) and flour.
  4. We hit the center of the package lightly with the roller to undo the butter that we put there.
  5. We take the “package” to the refrigerator for about 10 minutes.
  6. After this time, we unwrap the package, stretch the dough and roll it with a simple fold. We return it to the refrigerator for another 10 minutes.
