Homemade Cheesecake Popsicles

Cheesecake popsicle option 1

If you want to offer the children some homemade and healthy ice cream so that they do not spend the day eating sweets and industrial pastries, this is your opportunity to prepare delicious popsicles.

Ingredients

  • 150 ml milk
  • 150 ml of cream
  • 3 egg yolks
  • 50 grams of icing sugar
  • 1 tub of spreadable cheese
  • Biscuits
  • Raspberry marmalade
  • 10 grams of invert sugar (bought or homemade)

Preparation

  • To start, heat the milk, cream and cheese in a saucepan, stirring well so that everything is integrated and does not have lumps.
  • Next, beat the yolks with the icing sugar and the invert sugar. If you are going to prepare it yourself, you will have to buy some sachets of baking soda, 350 grams of sugar and 150 ml of water. Heat the last two and when it boils remove from heat, cool and pour the first one, put it in an airtight jar to keep it longer.
  • Remove the saucepan with the milk from the heat when it starts to boil and add the yolk mixture, beating with electric rods to integrate everything. Put it back on the heat and keep stirring until it thickens.
  • Pour into a container and let it cool covered with plastic wrap. It will be very creamy.
  • Then, take it to the freezer and remove it after half an hour, mix it with the blender so that it does not freeze (repeat this operation several times).
  • To assemble the popsicles: place a few tablespoons of jam in a mold as a base, pour the ice cream and on top the cookies that you have already crushed.
  • Lastly, put in the freezer until it hardens well. And to enjoy!

Cheesecake popsicle option 2

If you have not yet run out to prepare the previous recipe, you can take a look at this second option, very easy to make and above all very rich.

Ingredients

  • 1 package of Philadelphia type cheese
  • 1/3 cup sugar
  • ¼ cup sour cream
  • 1/3 cup milk
  • ¾ cup frozen strawberries or raspberries
  • 2 tablespoons melted butter
  • 12 digestive biscuits

Preparation

  • First, prepare the sour cream, place ¼ cup of cream and 10 drops of lemon in a container, integrate and let it rest for 5 minutes.
  • Next, add the Philadelphia cheese, sour cream, milk, and sugar to a food processor to form a cream.
  • Add the strawberries or raspberries. The first cut in quarters and the last in half or whole. Keep beating until you get a smooth cream.
  • Next, pour this preparation into the lollipop molds that you can get at any store.
  • Crush the cookies well and add the melted butter, it will be like wet sand.
  • Spread over each pole and press a little.
  • To finish, take the mold to the freezer for at least 6 hours.

Option 3 of Cheesecake Popsicles

This third alternative is ideal for those who follow a diet to lose weight, because the ingredients are without sugar. Pay attention to how it is prepared.

Ingredients

For the coulis:

  • 50 grams of berries (raspberries, blackberries, blueberries)
  • 1 tablespoon of water
  • 2 teaspoons of Agave syrup

For the poles:

  • 250 ml of liquid cream to whip skimmed
  • 200 grams of low calorie Philadelphia cheese
  • 50 grams of Agave syrup
  • 1 teaspoon vanilla paste

Preparation

  • In a pan, put all the ingredients of the coulis and heat until it boils, then crush, strain and reserve.
  • To make the popsicles, place the cream, cheese and syrup in a bowl and mix with electric rods, finally add the vanilla and integrate.
  • Finally, pour this preparation into the molds and place a little of the coulis on top. Put in the freezer 6 hours and that’s it.
